Ingredients

Cheese Grits for 4 servings
4 thick slices of bacon
Chopped into bacon bits
(or turkey bacon)
3 Tablespoons Olive Oil
(or reserved bacon fat)
1 white onion, diced
2 green onions, chopped
(white & light green parts only)
2 garlic cloves, minced
1/2 cup chopped green pepper
3 tablespoons flour
1 1/2 pounds shrimp, peeled &
deveined
3 cups chicken broth
1 teaspoon Cajun seasoning
2 tablespoons chopped parsley

Directions

Serves: 4

  1. Prepare bacon bits. Fry & chop bacon; set aside
  2. Prepare Grits according to package and stir in butter and cheese.
    • 4 cups Water
    • 1 cup Quaker Old Fashioned Grits
    • 3 teaspoons butter
    • 2 ounces of white cheddar cheese, Shredded
  3. Sauté onions, peppers, bacon, garlic, shrimp: In a large skillet sauté the garlic, onions, green peppers in olive oil until soft. Add the bacon bits, Cajun seasoning, shrimp and toss to combine. Add flour, mix until vegetables coated. Let this cook to form roux.
  4. Add chicken broth: Stir in chicken broth. Bring to boil and thicken.
  5. Serve: Spoon out some grits in individual bowls. Spoon some shrimp mixture over each bowl of grits and top with fresh chopped parsley. Serve.
